Meet Your Dietitian

Jessie Burgess is a registered and licensed dietitian. Jessie has always had a passion for nutrition, cooking, and helping others. Jessie received her Bachelor of Science in Dietetics and Nutrition at the University of Central Missouri. She is also a member of the Academy of Nutrition and Dietetics. 

Our Dietitian is available for complimentary consultations on topics such as:

  • Food allergies, celiac disease, diabetes, or other special dietary needs
  • Eating healthy on campus
  • Vegan and vegetarian nutrition
  • Weight management

Jessie's background includes experience in school foodservice management, federal nutrition program oversight, food safety, clinical nutrition, medical nutrition therapy, and sports nutrition. Her past positions include WIC Coordinator, Lead Clinical Dietitian, Outpatient Dietitian, and Health Educator. 

The dining team works to create healthy food options across campus and is available to assist students in making sustainable changes to their diet that fit their lifestyle.

We want to meet one-on-one with anyone who has individual dining needs to ensure that your dining experience is safe, delicious, and social. Simple Servings

Simple Servings is our resident dining option, providing safe and appetizing food choices "ready to go" for our customers with food allergies, gluten intolerance, or those who prefer plain and simple foods. The Simple Servings station offers food free from the FDA most-common allergens of peanuts, tree nuts, shellfish, wheat, soy, milk products, and eggs. All foods offered will be made without gluten-containing ingredients, and are prepared with special attention to the prevention of gluten and allergen cross-contact. Fish dishes will be included in the varied menu options as a healthy protein choice, along with beef, pork, chicken, turkey and vegetarian options. The menu will change every lunch and dinner. Simple Servings now available in both resident dining centers seven (7) days a week.

Providing you with healthy options is something your dining team proudly does every day. We help you select delicious and satisfying meals, snacks, and desserts by highlighting well-balanced menu choices and providing nutritional information and tips to help you make choices that fit your needs. 

Mindful is Sodexo's health & wellness approach that helps you make healthy choices second nature! We are committed to creating healthy environments for our customers. UCM to this effort is providing healthy, nutritious foods. The result of this initiative is an approach that focuses on transparency of ingredients, delicious food, satisfying portions and clarity in message so that you can make Mindful choices!

Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each meal is limited in calories, has fewer than 30% of calories as fat, fewer than 10% of calories as saturated fat, and is restricted in sodium, and cholesterol. Look for the Mindful icon to indulge in the healthy and delicious items offered at each meal.
